Cold-pressed oil is extracted at temperatures low enough that heat-sensitive vitamins and natural antioxidants stay intact.
Traditional wooden ghani (kolhu) pressing uses slow mechanical pressure rather than solvent extraction or high-heat refining.
When you compare cold-pressed groundnut or sesame oil to refined supermarket oil, notice the colour, aroma, and how little smoke appears at moderate cooking temperatures — those differences reflect what was preserved during extraction.
